In nearly all the baking videos I've watched that uses yeast, no one talks about 1st, 2nd or 3rd rising. I'm old school and sticking to my old ways of baking through several risings with the appropriate ingredients added accordingly - 1st rising(sponge: milk, flour, sugar and yeast. This small portion will tell me if my yeast is still good. If not, then I don't have to throw away the whole batch) to 2nd rising(adding everything else except the filling) to 3rd rising(adding the fillings) - a departure from how others do it.
This method was taught to me by Philip Heyer (aka Aklay), a Michelin-rated French chef who used to be the pastry chef to the Sultan of Brunei. But Philip taught me this for baking regular bread. I don't know if it still applies to pastry or cake. But doing it this way has always come out right for me, so I'm sticking to it.
Impulse Buying Instead of buying a block of Mozzarella cheese for my Pizza Nites, I decided to buy a block of cream cheese instead, not knowing what I'd do with it. Simona mentioned New York Cheesecake. Seriously? I lived nearly 5 years in New York City and never heard of NY Cheesecake. But it got me going. Ha-ha, time to roll-up my sleeve and make my first ever, cheesecake.
Why PHILADELPHIA Cream Cheese recipe? I've seen many cheesecake recipes on Youtube, but I settled for the PHILADELPHIA Cream Cheese recipe. Why? From a logical perspective, a lot is riding on the company name here, if they endorse a recipe using their product. I could just imagine they went through several versions of this recipe until they decided it was perfect. How? Perfect that it tastes great, perfect that it's simple to make and done in a short time (because their demographics aren't chefs).
So, unlike some wannabe chef-blogger who can care less about simple mistakes, PHILADELPHIA Cream Cheese has been around 149 years (since 1872) and currently owned by food giant, Kraft Heinz - they simply have too much at stake to make stupid or negligent mistakes.

Ingredients:
20 OREO Cookies (without the cream)
3 tbsp. butter or margarine, melted
5 pkg. (8 oz. each) cream cheese, softened
1 cup sugar
3 tbsp. flour
1 tbsp. vanilla
1 cup sour cream
4 eggs
1 can (21 oz.) cherry pie filling or ice cream, or both (optional)
Preparation:
crush OREO Cookies with a blender or with a rolling pin (about 2-1/4 cups)
add butter to the crushed Oreo and mix with spatula
layer to a baking dish and press down to serve as base
in a big mixing bowl, mix cream cheese, sugar, flour, and vanilla until well blended
add sour cream to the cream cheese mixture and mix well
add eggs, one at a time at low speed, until all is combined
pour the cheese mixture onto the crust until level. It's now ready for baking
bake at 325F° or 163C° for 40 mins or when the center is set. A jiggly center is ok since it will firm up as it cools
cool until it reaches room temperature and chill for 4 hours at least
serve and top with cherry pie filling (right out of a can) or top it with ice cream
for lack of a proper baking dish, this makes for a heck of a deep-dish New York Cheesecake
Ending Thoughts I lived in New York for nearly 5 years, and I never heard anyone talk about New York Cheesecake. I heard people talk about 'the best cheesecake in Brooklyn', and I've gone out of my way to taste it...and Wow! But New York Cheesecake? Maybe it's like going to China and asking around where the best 'Chinese food' is. Anyone from New York who can shed light on this?
So, how was it? Hmmm...tastewise, it was great. It was very rich, heavy and filling. The center however, because it was a deep dish, remained a little wet but cooked. I already baked it longer than the recipe, but it was hard to discern given the unusual thickness. Maybe 10 more minutes on the oven and it would have been perfect. Simona, however, thought it was great. Maybe she was just hungry.

There's a place here called Junior's, and though it's expensive (like, $50+ a cake), I think it's the best cheesecake I've ever had. Definitely need to get the strawberry glaze on it
Greg Peoplescape Of Rishikesh (Nov 22, 2021) I would say NY Cheesecake is a thing. I guess when you have cheesecake in NY, it's just cheesecake, just like no one would say NY slice of pizza. It's just pizza. But NYC is reputed for both pizza and cheesecake. It's probably in reference to the style -- there's something idiosyncratic about a NY slice of pizza or cheesecake.

crop-burning season in Chiang Mai is between late Feb to early April. But laws change everytime. This year, 2019, there is a 61-day ban on burning so the farmers started burning early. When my plane was approaching Chiang Mai on Jan 24, 2019, there was already a thick blanket of smog covering the entire city (and beyond). The bus makes the following stops at the following times from a 9pm Loei departure: Phu Ruea (9:50pm), Phitsanulok (12:40am), Uttradit (2:20am), Lampang (4:35am)
Final bus stop is at the Red Bus Arcade, Chiang Mai, 9 hour-trip, arriving 6am (from 9pm Loei departure).
Take a red songthaew to Old City, B50. They'll try to charge you B100, but they'll take B50 (just assure the driver you won't tell the other passengers).
How to Get a 60-Day Thai Tourist Visa and then Extend by another 30 Days
This process is BEFORE Covid 19. Not sure what it is now.
60-Day Thai Tourist Visa
NOTE: There is no need to go back to your country to get the Thai tourist visa. Any major city with a Thai Embassy will do. Apparently there is also no need to have an invitation from a Thai establishment to justify the visa.
Bring the following to the Thai embassy:
a) proof of money (bank statement will suffice)
b) flight booking to Thailand
c) onward flight back to your country from Thailand
d) filled-in tourist visa form
e) 2 passport pictures
f) hotel booking in Thailand (they didn't ask me for this but better be safe)
g) passport with at least 6 months validity
After handing over all the documents, they will ask you to come pick your passport with the visa the following day from 4 to 5pm. That's it!
NOTE: after 2 successful attempts, I was already questioned the 3rd time.
30-Day Extension
NOTE: When your 60-day visa is close to expiry and you want to extend your stay. No need to leave Thailand.
bring the following to the Immigration Office:
a) passport (make sure your Tourist Visa hasn't expired yet)
b) Baht 1900
c) photocopy of your passport + visa duration date stamp + TM6 card (white immigration card) and sign all the copies
d) completed TM7 visa extension form (available at the Immigration Office)
e) one 4cmx6cm passport picture
submit the above to the Front Desk. They will give you a stub with your number on it. Take a seat and wait for your number to be called
when your number is called, your picture will be taken. Then go back to your seat. They will call you again.
when they call you again, they'll give you your passport with your extended visa. That's it!
when there are no lines, the whole process can take only 10 minutes
arrive early - in case there is a snag (visa snag, documentation snag, transport ticket snag, etc.), you will have ample time to troubleshoot the problem if you arrive early (to the airport, to the bus terminal, etc.)
put detailed itinerary on the Calendar apps of your smart-phone according to timelines - this is where you do all your thinking and planning. Once written down, you don't have to think anymore while you are on the journey...you just follow the steps. This frees your mind for something else that might happen while you are already en route
avoiding scams - as a general rule, I ignore the touts or anyone I don't know who call out to me. The calling comes in many forms - "Hi! Where are you from?", "Excuse me! Excuse me!", "Where are you going?". I don't look them in the eye and I remain non-verbal with them. If you reply to them, you just gave them an 'in' to hound you. In order not to look rude, I smile and wave the 'not interested' hand to them, without looking at them.
power bank - hand-carry your power bank. Do not check it in. You can be called in when you are already inside the plane to go all the way to the loading dock so you can personally remove the power bank...and chances are, you'll have to surrender it to them. And you might delay the plane departure!
