Ginamos In the Visayas, Ginamos (wet salted fish) is a staple. But no one in his right mind would use Ginamos as pizza topping. However, in Italy, anchovies are a popular and expensive topping. Let's make this work!

Three ways to bring your pizza dough to Pizza Nite:
buy uncooked pizza dough from a pizza joint(easy and fun)
buy a ready-made cooked pizza crust from the grocery(easy but not fun)
make your own pizza dough from scratch, as follows: (challenging and most fun)
Ingredients:
3 1/2 cups flour
1 cup warm water (between 85° and 115° F)
2 tbsp yeast (I like my dough a little yeasty. You can use less)
2 tbsp sugar or honey (I use Muscovado sugar)
1/4 cup olive oil
1/2 tsp salt
Preparation:
Making the sponge/poolish Mix water, sugar, yeast and 1 cup regular flour in a bowl. Cover until it starts to bubble (first rising, around 45 mins). This can now be used. However, if you want a more flavorful pizza dough, keep this covered in the fridge overnight or a full 24 hours.
Kneading Mix the rest of the ingredients (flour, salt and oil) and start kneading (tip: press on with your body weight, not just your arm power). The dough should be soft without being sticky. Too sticky, add flour. Too hard, add water. You're done when the dough bounces back when you poke your finger onto it. Cover until double in size (2nd rising, around 45 mins).
Scaling and shaping Punch the dough to take the air out. You can cut it up and use only what you need. You can cut it up into 3 and shape them into balls - one of those balls should be good to make one 13" regular pizza. You can freeze the 2. Flatten one ball into a circular shape. I usually flatten it on the same tray I will bake on so I don't have to make a transfer - I just apply a little oil on the tray before flattening. Using both hands, one on top of the other, press from the center outwards to stretch it in all directions. You can flatten it more by using a rolling pin (or wine bottle). Take a fork and put puncture holes all over the dough to keep it from bubbling up while cooking (which also holds the sauce in place). Wait until double in size (3rd and last rising).

pack of tomato sauce - for a quick kitchen hack, I use this as shortcut
ginamos - if you're not in the Visayas, use anchovies
dilis - same fish but sun-dried and mildly salty
cheese - I use Eden or Magnolia (there's no Mozzarella in Lazi)
basil - it's called sangib here and it's abundant
tomatoes - chopped up for topping
Preparation:
Saute tomato sauce package saute with garlic and onions. Sauteeing also heats up the sauce
Steam the dilis this is bought tough and dry. Steaming it softens it as topping
Dry-roast the dough (no oil) I don't have an oven but the wok is fine. After flattening the dough, cook at the lowest heat setting, both sides, covered to keep the dough moist. Take it out
Add sauce and toppings sauce, then cheese, then the fish 2:1 ratio, 2 parts dilis to 1 part ginamos (ginamos is really salty so don't get carried away). Slide back to wok for about 5 minutes, covered. By covering, you create an oven-like environment for the cheese to melt
Wire rack put on wire rack and add chopped basil and chopped tomatoes

Ending Thoughts This isn't bad for a first time. The wok roasting really works because the pizza dough is super crunchy without being burned.

Resorts - Lazi has some beach/dive resorts on its west coast - Gabayan Riviera, Lazi Beach Club, Bahura Dive Resort. However, the popular area for tourist resorts are in San Juan
Transport - Lazi is the junction where the jeeps begin their clockwise route (Lazi-San Juan-Siquijor Port) or the counter clockwise route (Lazi-Maria-Larena Port). Because the jeeps are rare with about 2 to 3 trips/day only in the morning, it's practical to just have a motorcycle here in Siquijor. With its affordability (a brand new Rusi motorbike is as low as P45k), people just buy motorcycles...especially those who live up in the mountains.
The Boulevard - Lazi's main draw is its seaside cobblestone promenade. When the sun goes down, people gather here for eats, drinks, open-air, harbor view and the sunset
Lazi Port - Kho Shipping, the shipping line operating from Lazi Port, has stopped its service to Cagayan de Oro, Iligan, Dumaguete, Tagbilaran and Cebu. Passengers can go to Siquijor Port or Larena Port for boat services out of Siquijor Island

Jeeps - there are only 2 routes for jeeps within Siquijor Island - and they are rare. Most people have their own motorcycle transport.
Siquijor Port to Lazi - last trip leaves at 3pm from station near market
Lazi to Siquijor Port - jeeps depart from the Lazi Port area. 5 jeeps, the last trip at 12:30 pm. Lazi to San Juan, P50.
Larena Port to Lazi - jeeps are unpredictable. As of this writing, there is only 1 jeep plying the Larena-Lazi route. This jeep leaves Larena for Lazi at 9:50am. After that, no more jeep. You'll have to take a tricycle to Siquijor Pob for jeeps going to Lazi
Lazi to Larena Port - 6am (daily) and 9 am (M-Th)

There is only one bus plying this route - Sugbo Urban. Tourist class coach, a/c, comfortable, Sun-Fri (these dates keep changing). P420 for bus, P275 for ferry to Liloan. Larena Port around 5 am, makes a clockwise roundtrip around Siquijor Island - Larena, Enrique Villanueva, Maria, Lazi (stops at Lazi market for breakfast and leaves 6:50 am), San Juan, Siquijor (arrives 8am, P50 from Lazi to Siquijor Poblacion) and catches the 1pm ferry at Larena Port (Sundays at 3 pm) for Liloan, Cebu and resumes its land route. Arrives Cebu City (South Bus Terminal) 10 pm.
Sugbo Urban is the cheapest and most convenient way because it goes around the island (clockwise) along the circumferential road, passing through - Enrique Villanueva, Maria, Lazi, San Juan, Siquijor...and back to Larena where it takes the ferry at 1 pm. This saves you the hassle and high transport cost of a tricycle. Besides, it's a long trip from the other side of the island to be taking by tricycle.
